I am quickly realizing that eating healthy doesn’t have to taste bad. My dieting strategy includes the Paleolithic (or Caveman) approach to nutrition. In a nutshell, it means eating foods that agree with human genetics, nothing refined or full of trans fats and sugars. Foods like grass-fed meats, seafood, fruits and vegetables, nuts and healthy fats are all great Paleo choices.
Tonight, my wife and I cooked up some delicious Bison Burgers (no bun), Sweet Potato and Spinach Salad. Stuffed with jalapeño peppers and onions, our burgers were loaded with flavor. The following recipe makes 4-5 patties.
[tabgroup]
1lb Grass-fed Ground Bison
Jalapeño Peppers
Onion
Garlic
Salt & Pepper
Step 1
Finely chop fresh Jalapeño Peppers, Onion and Garlic. To make about 5 patties you need only 1-2 Jalapeños, 1 medium-size Onion and 1-2 Garlic Cloves. Too much filling may result in a crumbling patty.
Step 2
Fire up a griddle pan or grill, to medium-high heat.
Step 3
Combine ground Bison, Peppers, Onions and Garlic in a mixing bowl, then form mixture into palm-size patties.
Step 4
Grill patties to desired doneness, usually 4-6 minutes per side.
